You’re here because you love cookies right?

There’s nothing like the sweet surprise of a freshly baked cookie showing up at your doorstep and the pleasure of ripping open the package to dig into your favorite flavor.

What if I told you though there are five more fun-filled ways to eat a cookie beyond just grabbing a tall glass of cold milk and dunking away?  Let’s get started.

  1. Ice Cream Cookie Sandwiches:  The photo above tells it all.  All you need is a pint of your favorite ice cream and a selection of cookies to sandwich.  I’m partial to the traditional vanilla/chocolate chip cookie combination.  A solid scoop goes onto the flat side and then press the second cookie on top.  Line a sheet tray with parchment paper and freeze until solid for about 4-6 hours.  You’re more than welcome to enjoy right as you sandwich those guys together but expect a sweet, sticky mess.  Have the patience to freeze until solid.  Place leftover sandwiches (if that’s a thing that exists in your household) in freezer bags to enjoy the rest of the week.
  2. Cookie Milkshakes: Ice cream and cookies really are the perfect match.  Don’t have the patience to sandwich them together or don’t want the drippy mess as you begin to eat those sandwiches?  That’s okay, I get it.  Just put everything into a blender and shake it up.  Get the recipe here.

3. Ice Box Cake:  Traditionally speaking ice box cakes are made with chocolate wafer cookies and cool whip.  Can we elevate this pie just slightly? Triple Chocolate Cookies will do the job to replace those pre-made wafer cookies and homemade whipped cream is as easy as 1-2-3.  To make:  Line a 9×5 inch loaf pan with plastic wrap and place a layer of cookies on the bottom, then a layer of whipped cream, for an added bonus sliced strawberries and repeat with cookies, whipped cream and strawberries until you reach the top finishing with strawberries.  Cover the top with plastic wrap and refrigerate for at least 2 hours or overnight.  Best if eaten within the same day or next day.

4. S’mores:  Forget graham crackers, they are overrated.  Elevate your s’mores by smooshing a perfectly toasted marshmallow between two cookies.  Bonus, the chocolate is already in the cookie.  Extra bonus, add some more chocolate [<– get it some more = s’more, okay I’ll stop now].  Double extra bonus, s’more the s’more cookie. Woah. . .

5. Deep Fried:  Last but certainly not last, deep fry those suckers.  Decadent, for sure.  Great for a special occasion or just because you want to try it? Absolutely.  I recommend this blog post from The Kitchn for the best method.
