Another New York staple are rainbow cookies, sometimes known as tri-color or 7 layer cookies. Comprised of three layers of almond sponge, filled with a 4 fruits jam and topped with chocolate ganache - these cookies are beloved by many.  We make ours extra special by using all natural, plant based dye to color the layers.
